The idea
Frankfurt ages apple wine in a Bembel. We age kimchi in an onggi.
An onggi is a Korean clay jar with a breathing wall: air gets in, moisture stays put. We ferment our own kimchi, soybean paste and chilli paste in them, slowly, the way Korean families have for generations.
Frankfurt already knows the idea. The Bembel is stoneware too, it sits in the middle of the table, and everyone pours for each other. That is how we eat: lots of small bowls in the middle, everybody helps themselves.
